The fermented papaya, derived from the papaya fruit, is obtained after a prolonged lactic fermentation process (between 8 to 10 months). Unlike fresh papaya, which is rich in papain, an enzyme with digestive properties, fermented papaya is devoid of enzymes but acquires new biological properties through this transformation. This process, developed by Japanese researchers, is inspired by Filipino dietary practices where the consumption of fermented papaya has been associated with exceptional longevity. Fermentation profoundly changes the composition of the fruit. While vitamins A and C diminish almost completely, the final product becomes a real source of oligosaccharides, amino acids (all 20 essential ones), and bioactive compounds. These substances boost the body's natural defenses by increasing the production of glutathione and superoxide dismutase (SOD), major enzymes in the fight against oxidative stress. Used for its antioxidant and immunomodulatory properties, fermented papaya is particularly recommended as a supplement in cases of intense oxidative stress, such as chronic diseases, immune fatigue, or degenerative pathologies. Popularized notably for its use in alleviating certain symptoms of Parkinson's disease, it remains today a supplement of choice to combat the effects of aging.
